My husband's hands are starting to be affected. He can't lift his fingers much in an upward motion - pushing down is fine still and grip strength is high.

Does anyone have recommendations on what mouse to use for the computer to make his life easier?
 
An angled trackpad for now, from what you have said. Apple's is nice.
 
They also make some larger ergonomic computer mice. They are pretty reasonable. Let me look.

They have vertical mice that you could hold in your lap and click the top or bottom button for left and right click. Most computers and tablets have a setting for pressure to adjust the needed pressure to make a click. Its a 20 dollar fix for the short term

Thanks guys, i will look into both of these.

That's a good point re: the pressure Gooseberry, i will as him about that. He was using the apply mouse which was just touch anyway but found the up/down motion of clicking tiring.
 
That's why I recommended a trackpad that you can set to tap instead of click, so less force and travel (vertical movement) is required.
