Glutamate can be bound or unbound. The unbound is what people with ALS must avoid or at least minimize. Here is a list of glutamate content of foods, both bound and unbound.

Note parmesan cheese. Very high in unbound (or free) glutamate.

You've been busy today, Jerry:-) Thanks very much for this particular link, it was very helpful. In trying to switch my diet to one appropriate for us PALS (away from my fast-food diet), I had included corn and peas. However it appears those are not the veggies for us. Very uselful information.
