I was thinking about ways that make our lives a little easier and thought I'd start this thread about ways we make cooking easier. CALS and PALS and even those who are struggling with wading through their own diagnosises can share from all over our wonderful world.
My grandmother use to make these, my mom made them, I make them and now our daughter makes them. THey take a little time to put together but once they're done? They're easy to just pull the mixture out of the fridge and spoon into cupcake tins lined with cupcake liners.
Here's our 6 Weeks Bran Muffins....Combine and let cool-
2 Cups boiling water and 5 tsp. baking soda. Set aside.
Cream together 1 Cup shortening or butter & 2 Cups sugar.
Once creamed, add 4 eggs.
Stir and add in 1 quart buttermilk.
Combine dry mixture of 5 Cups flour & 1 TBLSP. salt
(If you like nutmeg or cinnamon add some)
THen mix into the creamed shortening and egg.
Add cooled soda water and mix.
FOLD into above batter:
4 C. All Bran
2 C. 40% Bran Flakes
(optional goodies can be added into the above mixture)
2 Cups CHopped or diced dates
1 Cup chopped nuts
Store in a covered container in refriderator one night before using the mixture to let everything soak into the bran. THis mixture will keep for 6 weeks if it lasts that long.
To bake: Spoon into muffin tins lined with cupcake liners. I fill them with a spoon full of mixture so they are about half full. That way the mix lasts longer, too.
Bake at 350 for 20 minutes or until toothpick comes clean.
SOmetimes I punch into the top a few blueberries or chocolate chips. If some like nuts and some don't, I leave the nuts out of the main mixuter and put a couple nuts at the bottom of the muffin cup cake liner with a couple chockolate chips and THEN add the muffin mix.
They are yummy! Now my husband can get up, get the muffin tin out, put the liners in, and bake fresh muffins for us every couple of days. We ususally only cook about 6 at a time unless we have company.

Here's what we have for breakfast a few times each week: smoothies.
Ingredients:
1 ripe banana
1 cup other fruit (frozen or fresh - any kind)
1/2 cup juice
1 cup vanilla yogurt
Put all ingredients in a blender until smooth. You can easily double the recipe and keep in refrigerator for another breakfast (doesn't keep more than two days).
If we have the time, we have smoothies with muffin. I'll try the new recipe next time!
Ok guys my favourite is tea biscuits. Has anybody got a good recipe not using Tea Bisk or Bisquick mixes. They taste like cardboard. A good ole down home recipe is what I'm lookin for.

Is a tea biscuit like a scone? We lived in Canada for 12 years and I'm trying to think of what it is.
SOMEONE here MUST have a good oel from scratch recipe. I'll try making them if they're posted.
Scones are great with butter and jelly or honey. I'm hungry just thinking of eating them hot out of the oven.

Al - I too love scones. But, I don't have a recipe.
Frizzle - I always include berries in the smoothies. I buy bags of frozen fruit to keep in the freezer: blueberries, strawberries, mixed fruit. Then, I just vary the types of fruit each time. Drinking these fruit smoothies really helps with constipation!

How about this one?
TEA BISCUITS
2 c. flour
2 tsp. baking powder
3/4 c. sugar
1/4 tsp. salt
1/2 c. vegetable shortening
1 c. raisins
2/3 c. milk
Sift together the flour, baking powder, sugar and salt. Cut shortening into the dry ingredients until the size of small peas (as for pie crust). Add the raisins and milk and mix to form dough. Knead 10 times and pat to 1/2 inch thickness. Cut into 1 1/2 inch circles and bake on greased cookie sheets at 375 degrees for 10-12 minutes. May also be dropped by heaping teaspoonfuls onto greased sheets.

Al, here is recipe just like my 90 year old mother made. This recipe is also the same as scones.
IRISH TEA BISCUITS
2 c. flour
3/4 c. sugar
4 tbsp. shortening
2 eggs
3 tbsp. baking powder
3/4 tsp. salt
1 c. raisins
1/2 c. milk
Sift flour, sugar, baking powder and salt together (add 1/2 cup wheat germ if desired). Cut in shortening with a pastry blender until mixture is like coarse meal. Add raisins. Beat eggs and milk together and blend into mixture. Line muffin tins with paper baking cups and fill each cup 2/3 full of mixture. Bake 20-25 minutes at 350 degrees or until golden brown. Makes 12 to 15 tea biscuits.

Joel-the Irish tea bisquits sound good. I am going to try that one along with Frizzel's bran muffins. I drink a smoothy every day as my face tires easily and chewing is a chore. If I start to lose weight - like after weeks of nausea, I make mine with half ensure and half fruity yogurt. I also use soft tofu instead of yogurt but that's an aquired taste...Any kind of fresh fruit tastes good and in the winter I like canned pear in my smoothy. I love this thread, Frizzel! Cindy

.... I'm resurrecting an old thread, wanted to share smoothie ideas.
I've been using soy milk and soy icecream because it does not cause the formation of phlegm like cows milk does.... all of these are blender recipes rather than milkshake mixer style. We have a Breville blender, not as super duper as a Vitamix, but it does the trick for smoothies, I hit the smoothie button, and 60 seconds, or less, later it turns out a smoothie that is uniformly thick with no ice chunks. Lately I've been pouring part (after blending) in the glass, and putting part in the freezer so it stays thick long enough to get it all swallowed.
Peanut-butter Banana
1 cup plain Soy milk
giant spoonful of peanut butter ~ probably about 1.5 tablespoons
1 banana
half a tray of ice cubes
* I add my vitamin powder in, can't taste it at all.... Its All One brand. Use the type for "active seniors" (cringe) because this formula contains the co-q10
if the banana isn't super ripe I also cheat and add a little sugar :)
Blueberry Espresso
1 big handful of blueberries
double shot of espresso
1 cup chocolate soy milk or chocolate soy icecream
maybe a little sugar or Kahlua (why not, right??)... chocolate syrup would taste good too, never think to buy it though....
half a tray of ice cubes
Mango Lassi
(this makes a big smoothie, so plan on sharing, or cut down amount of ingredients to taste)
1 1/4 cups plain full fat yogurt
1/2 teaspoon lemon juice
1/2 cup fresh mango pulp*
1/3 cup cold water
1 to 2 tablespoons honey or sugar (depending on how sweet you want it)
9 to 10 standard-size ice cubes
* Canned or frozen mango may be substituted
If using a fresh mango, peel and remove the flesh from the pit
Vanilla Chai tea latte smoothie.
1 cup Bolthouse Farms Perfectly Protein Vanilla Chai Tea with soy protein
1 cup vanilla icecream or vanilla soy icecream,
half a tray of ice cubes

Cleaning out a closet & I found these; had forgotten about them.
From the Miraval Spa- they were all delicious (although, some more "healthy tasting", if you know what I mean). For PALS who have difficulty swallowing all their vitamins & supplements, these could help to substitute!
Of course being "spa food", they are lower in fat & calories (I'm sure you can beef them up), but they are full of good stuff & different tastes; at least they will offer some variety.
Since it is out of season for most of the fruits, substitute with frozen.
Blueberry Super Smoothie;
1/2 banana (peeled)
1/2 cup pomegranate juice
1/2 cup blueberries
1/2 cup nonfat yogurt (or full fat yogurt for PALS)
1 tsp. fresh mint
1 TBL walnuts
combine all ingredients into a blender & blend until smooth
makes 2 servings
cal: 176 fat:4G (with non-fat yogurt)
Chef's Morning Starter
4 dates
1 banana
10-15 grapes
1/3 cup soy protein powder
12 oz ice
comine all ingredients into blender & blend until smooth
makes 1 serving
cal: 361 fat:2G
Green Power (this may sound gross, but it actually quite good!)
2 oz wheat grass* -juiced
2-3 whole dates
1 banana
1/2 cup papaya juice
12 oz ice
combine all ingredients in blender & blend until smooth
makes 1 serving
cal: 240 fat: 1G
*wheatgrass is a great blood purifier; it helps stop the development of unfriendly bacteria. It is very potent & could have a nauseating effect in beginning. Start with small amounts then work up to more. You can purchase it in powered, liquid, & tablet form from a health food store.
Omega Sensation
3/4 cup apple juice
1 banana
1 tsp flax seeds
1 tsp hemp seed oil
1 tsp cardamon
1 tsp cinnamon
12 oz ice
combine all ingerdients in blender & blend 'til smooth.
makes 1 serving
cal: 240 fat: 3G
Pina Colada Surprise (maybe add a little something here? this could be a 5pm smoothie!)
1 cup chopped pineapple
1 medium apple, chopped
1/4 cup lite coconut milk
1/2 cup papaya juice
place pineapple, papaya juice & apple in juicer & juice. Sit in coconut milk.
makes 1 serving
cal: 210 fat: 6G
Don Juan (I thought you might like this one Rose!?!)
1/4 cup pineapple juice
1 banana
1/4 cup lite coconut milk
1/4 cup chopped mango
12 oz ice
combine all ingredients in a blender & blend until smooth.
makes 1 serving
cal: 210 fat: 6G
Energizer Bunny (here's one for Glen!)
5 carrots
1 one inch segment of ginger root
1 medium apple
combine all ingredients in a blender & blend until smooth.
makes 1 serving
cal: 200 fat: 1G
These would be good not only for PALS, but CALS would benefit from them too!
They are great for energy & lots of vitamins.
Once you have all your ingredients, they are quick to put together in the morning when you have no time. More nutritious than cereal, easier then making eggs, etc.
Also a great afternoon "picker-upper"!

Gee what a great lot of recipes!!!! I agree with Rose re using soy milk and icecream in smoothies. It is definitely less inclined to add to or create excess mucous. Also is delicious and not near as bad as you might think if youve never been a soy fan!!!!

Thanks so much for sharing these. (that's a lot of typing!) Have you tried all of these yourself? I've had fresh wheat grass juice from the little juice bar at Whole Foods and really don't mind the taste. It does give a burst energy.
Glen, You have such a creative side to you. IMO you should develop some smoothie concept recipes to share 8) Seriously. The espresso blueberry chocolate idea was my own experiment (gone good rather than bad) sometimes I add Kahlua. & probably protein powder should be added to give it more value other than calories and antioxidants.
So, we're waiting for some SA specials;)

I did try all of these when we were at the spa! Each day was a different one.
I made 1 or 2 when we got home (can't remember, as that was several years ago), somehow the recipes got put away & forgotten. (it's amazing what I find when I clean out drawers & closets!LOL)
I think anything that has banana in it conceals some of the "healthy" ingredients, as well as pineapple & blueberries. These were all very light (as compared to a milkshake type of smoothie), so yes, PALS would want to beef them up, while for CALS they are great just as they are. Experiment with adding protein powders & fats, depending on your needs. Soy is always a good substitute for any dairy.
They really give a burst of energy- so needed for caregivers- and anti-oxidants to help keep us healthy to care for our PALS! So, even if your PALS won't try them (Glen), give them a try for yourself !
As far as the typing- I had time on my hands yesterday. Jim was watching the Eagles in the afternoon (not having a good year so far), and the Phillies at night (donig great so far- looking for a repeat!!!) Was just not in a sports mood yesterday.

I have always been a leftover person. Leftover surprise is something I enjoy. Thats where you throw all caution and start mixing stuff from the fridge into a frying pan.
Then I specialize in sandwiches. Peanut butter , bologna and pickles with Miracle Whip is a favorite. Once a year , I buy a jar of liquid plastic (Cheeze Whiz) and use it to stick everything together in a sandwich. Cheese Whiz & Kraft Peanut Butter MmmMmm.
Some of these , I wont call them recipies, are going to be a challenge for the peg. I figure V8 vegetable juice will be the liquid of choice.
I also know that once I am feeding through the PEG that Wanda will start cooking some of those "Gawd thats terrible" foods.
First , I am on the hunt for a 5200 !

I made Beer Cheese Soup with Asparagus for my husband this evening. Doubled the cheese and over cooked the asparagus so everything would be nice, thick and soft for easy swallow. You can throw this in the blender if you need smoother consistency! Just use any beer cheese soup recipe, they are all about the same. But don't use those processed cheese recipes - gross!
Peanut butter and iceberg lettuce on wheat bread is awesome! My son loves it too! My husband thinks we are weird. What's new? LOL

Glen, that sandwich doesn't, but hey, I put grape jelly on grilled cheese, so who am I to talk, right?
But, while on the subject of unusual sandwich combinations, here's a recipe for those who are not chewing and swallowing impaired.
There is a restaurant in Pittsburgh, (Primanti Brothers) which started out as a truck stop diner, now they have several locations, and their sandwich is to die for. It features really great Italian bread, a meat, cheese, and vinegar based cole slaw and still hot homemade french fries. The combo of the fries with the coleslaw and cheese..... soooooo good. They still serve it up on waxed paper rather than plates. They're open all night at their original location, in the strip district, and I remember it would be packed at 2 in the morning, with patrons wearing tuxes and evening wear sitting right along side the t-shirt and blue jeans crowd.
Here's the recipe for the slaw :
1 Head green cabbage, shredded
1 onion, sliced thinly
1/2 cup apple cider vinegar
6 tablespoons sugar
6 tablespoons oil
Salt and pepper to taste
Combine the shredded cabbage, shredded carrots, and onion in a bowl. Place in refrigerator for at least an hour.
In a pot, dissolve the sugar into the vinegar and oil over low heat. Add in salt and pepper and cool. Wait until completely cool before pouring over cabbage mixture, chill in refrigerator for at least an hour.
To make your sandwich,
Use real Italian bread, and some sort of meat if you wish (we used to make them meatless or with fish fillets at home, but their meatloaf sandwich is probably the most famous, so for instructions I'll use this.
In a pan, over medium heat, add just enough oil to coat the bottom of the pan. Add in your meatloaf, slice about 1/4 an inch thick, and heat until the meatloaf begins to crisp. After flipping, add a slice of provolone cheese and cover until melted. If you wish, you can also fry up an egg and add it as a sandwich layer....
Now it is time to prepare the sandwich. Place your meatloaf and cheese slices on the first piece of Italian bread, then place a hand full of fries on top of the meatloaf. Pile on at least half a cup of your coleslaw. Then add your sliced, fresh tomatoes. And finally, top it off with the other slice of Italian bread. Serve with a tall, cold beer, sit back, and enjoy life for a while.
This IMHO should rank on the bucket list for foods to try at least once.
Who misses being able to eat Vegetable Thins crackers? I found tried a soup which tastes very much like them (just add more salt & pepper) It comes in a box, is made by V8. Its called Golden Butternut Squash. It has a few small lumps of potato in it, Its not very high in calories, but its nutritious. Another soup I've been eating frequently lately is Campbells condensed Green Pea. This is fairly high in calories. The thick consistency from can ~ its almost a paste ~ makes it difficult to mix the water in, so I've started dumping it into the blender, and mixing the water in that way.

Glennnnnn, Here is my recipe for Carmelized French Onion Soup! Not really a recipe as much as how to do it :]
First make a beef base for your broth. The best is if you have beef bones that you first bake in the oven and then boil to make the broth. Next best is use Knorr Swiss Beef Broth Granules or canned Beef Broth from Swansons. The quanity is whatever you wish. I make 3 gallons at a time and freeze it in 8 cup amounts :] I add Worcestershire and a little Maggi Seasoning to the beef base-enough so that it tastes and smells right. [how is that for helpful??!]
Next you need to slice your raw onions. I like to use a sweet onion. Cut off the root and the stem end-peel-cut in half lengthwise and then slice with the cut side down so that you have small slices that are about 1/4" thick. I do 10# to make my 3 gallons. Just remember that the onions will decrease in size to about 1/4 of the original uncooked amount. I place all the sliced onions in a gigantic roaster pan and toss them with a very small amount of Canola oil to just slightly coat. Place in a preheated 425 degree oven. Stir with a wooden spoon about every 10 to 15 min. It takes about 3 hours to carmalize 10#. Just watch and stir. Obviously a smaller amount will take less time and it just smells deeeeevine! They will begin to get limp and translucent before they carmelize-stir, stir! When they begin to turn a light carmel color, I sprinkle just a little brown sugar over them and stir it in. I cook them until they are a deep carmel color-pull out of the oven and pour white wine over them to deglaze the pan and to add flavor. You don't want them floating in wine but about 1/2 of their depth. Stir the onion/wine into the beef base-salt andpepper to taste and let simmer. Thinly slice french bread and toast in oven under the broiler. Place french bread toast on top of ovenproof bowl of French Onion-add a slice of Swiss or Provolone cheese and slip under broiler for a moment to melt and slightly brown the cheese. Yummy deeelicious. The cheese is difficult for anyone with bulbar issues but Web handles the soup/french bread toast with gusto. This also freezes very nicely. Being a Prairie Woman I always cook enough to feed a threshing crew lolol I always cook enough for at least 3 or 4 meals and freeze for later! Also, onions are suppose to be good for you :]

Yes, they need to be oven proof if you are going to put them in the oven under the broiler. The other option and much easier is to just put it in the microwave and nuke it for a few seconds to melt the cheese. Other than the slicing of onions and the stirring this is soooo simple and YUMMY!

I LOVE fRENCH FRIES so recently bought a SEB Actifry. You can cook a whole panful of fries with just ONE spoongul of oil. Make fried parsnips, carrots, potatos, french beans, onions, any veg at all..........Easy , healthy, delicious

Peanut Butter Cheesecake Recipe

Here is another great combination of chocolate and peanut butter, peanut butter cheesecake. This is a great recipe to make for the Holidays and is sure to please any peanut butter fans. The crust is crushed Oreo cookies and chopped roasted peanuts. The filling is your basic cheesecake filling with the addition of peanut butter and chopped Reese’s Peanut Butter Cups. This will make a fairly large cake; it uses a 10” spring form pan. It will require a little work to make but in the end, it’s well worth it! This cheesecake needs to be refrigerated for a minimum for 4 hours. If you are looking for a fantastic cheesecake recipe, give this one a try.

Crust-
4 ½ cups oreo cookies (crushed) I used 2 1/2 cups
1 cup roasted peanuts (chopped)didn't use
½ cup butter (melted)
Filling-
2lbs cream cheese (softened)
5 eggs (at room temperature)I used only 3
1 ½ cups firmly packed brown sugar
1 cup smooth peanut butter
½ cup whipping creamI substitued 1 cup sour cream
1 teaspoon vanilla extractI used 1 tablespoon
12 Reese’s Peanut Butter Cups obviously chopped
Topping-
3 ounces sour cream I used 1/2 cup
½ cup sugar I used brown sugar and less than that
I added 2 tablespoons of cornstarch to the cream cheese mixture
Cooking Instructions:
Step 1: Put Oreo cookies and peanuts in a food processor and grind. Mix ground Oreo cookies and peanuts with the melted butter. Press the mixture onto the bottom and up the sides of a greased 10” spring form pan to make the crust.
Step 2: To make filling- In a large bowl beat cream cheese with an electric mixer until smooth. Add eggs one at a time and beat after each egg is added. Add sugar, peanut butter and whipping cream. Mix until smooth. Fold in pieces of Reese’s peanut butter cups with a rubber spatula. Pour filling into prepared crust.
Step 3: Place into the oven and bake at 275 degrees for 1 ½ hours or until firm and lightly browned.I cooked it at 325 for 15 min and then turned down to 250 for 1 hour 15 minutes
Step 4: Combine sour cream and sugar and pour over the cheesecake. Return cheesecake to the oven and bake for 5 minutes. Remove from the oven and allow cheesecake to cool for 1 hour. Place into the refrigerator for at least 4 hours.
I cooled it for 15 in and then loosened the side and let it cool. Make sure you bake it on a sheet with edges as the butter runs out while baking. I think the butter for the crust needs to be decreased! I used 8 double packs of Reese's in the batter and 4 for the top after I took it out of the oven.
Web said that this is the best one yet! I added this because CJ wanted the recipe. Well worth the effort and Web had no problem swallowing it!!

Oh that sounds almost a fattening and unhealthy as can be! JUSt how I like it...yummee. Definitely on the tables as we sip our fruit cocktails to the song of the nightingales

Rose...I love primantis! NOthing like fries and cole slaw on a sandwich. My hubby always liked the fried egg in it as well.
